Bacon, Avocado, and Blue Cheese Salad with Lemon Vinaigrette for One

Ingredients

  • 1/2 head romaine heart, thinly sliced
  • 1/2 avocado, diced
  • 1/2 cup quartered cherry tomatoes
  • 2 slices cooked bacon, crumbled
  • 2 tablespoons crumbled blue cheese
  • Thinly sliced red onion, to taste
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  • Place all of the salad ingredients in a large bowl, or platter.
  • Place the olive oil, lemon juice, dried oregano, salt and pepper in a small bowl, and whisk well to combine.
  • Drizzle over salad, and toss well to coat.
