Crispy Oven Fried Black Pepper Chicken
Serves 2-4.
Ingredients:
2 eggs
1 tablespoon water
2 teaspoons hot pepper sauce
1 lb. chicken tenders
2 cups panko breadcrumbs
½ cup rice cereal
1-2 teaspoons lemon pepper
1 teaspoon kosher salt
½ teaspoon smoked paprika
2 teaspoons dried parsley
Instructions:
Preheat oven to 400 degrees.
Whisk eggs together in a large bowl with the water and hot sauce.
Combine panko, cereal, pepper, salt, and paprika on a large paper plate.
Fit a large, rimmed baking sheet with parchment.
Coat the chicken in the egg mixture, and dredge through panko mixture.
Bake for 20-25 minutes, or until chicken registers 165 degrees with a meat thermometer.
Garnish with dried parsley.
